Vanilla Coconut French Toast
There’s nothing I like better than a fluffy french toast breaky - layer with your favourite toppings and voila!

INGREDIENTS
4 Slices bread of choice (I use sourdough)
3 eggs
2 tbsp shredded coconut
1 tsp ground cinnamon
1 tsp vanilla paste or extract
1 tbsp butter
Berries
Yoghurt
Maple syrup (optional)
METHOD
Whisk together egg, shredded coconut, cinnamon and vanilla
Dip slides bread egg mixture on both sides, one by one before cooking in a medium heat fry pan with melted butter
Serve topped with yoghurt, berries, maple syrup, raspberry chia jam - any of your faves!
