Vanilla Coconut French Toast

There’s nothing I like better than a fluffy french toast breaky - layer with your favourite toppings and voila!

Cook time: 5 minutes

Total time: 10 minutes

INGREDIENTS

  • 4 Slices bread of choice (I use sourdough)

  • 3 eggs

  • 2 tbsp shredded coconut

  • 1 tsp ground cinnamon

  • 1 tsp vanilla paste or extract

  • 1 tbsp butter

  • Berries

  • Yoghurt

  • Maple syrup (optional)

METHOD

  1. Whisk together egg, shredded coconut, cinnamon and vanilla

  2. Dip slides bread egg mixture on both sides, one by one before cooking in a medium heat fry pan with melted butter

  3. Serve topped with yoghurt, berries, maple syrup, raspberry chia jam - any of your faves!
