Plant-Powered Beef Bolognese

Adding lentils to mince dishes is a really easy way to sneak in extra plant foods and increase the fibre content, plus they blend in completely so no one knows they are there.

Lentils are an excellent source of prebiotic fibre (food for our gut bacteria), and protein. They’re a bit of a powerhouse and buying them prepared in a tin is totally fine nutritionally.

This bolognese basically a boosted version of a typical recipe with loads of veg and flavour.

INGREDIENTS

  • 500g beef mince

  • 4 cloves garlic, crushed

  • 1 carrot, diced

  • 1 zucchini, grated

  • 2 sticks celery, diced

  • 2 tins tomatoes

  • 1 tbsp tomato paste

  • 1 tin lentils, drained

  • 1 cup beef stock or bone broth

  • 2 bay leaves

  • Pasta of choice

METHOD

  1. Brown mince over medium heat before transferring to plate.

  2. Add onion, celery and carrot to same pot and cook until softened.

  3. Add tomato paste and bay leaves & stir until combined.

  4. Pour in tinned tomatoes, lentils, broth/stock and mince.

  5. Add chopped garlic and simmer over low heat for 20 minutes.
