Raspberry Nicecreams

Homemade icecreams are super simple to make, and so easy to try new flavour combinations. It’s also a lovely way to involves kids in choosing different fruits to use.

I make these dairy-free, but you could easily include some Greek yoghurt if you like. You could also include some cacao nibs or any other bits you fancy - it’s such an easy recipe to substitute whatever ingredients you have on hand!

INGREDIENTS

  • 165ml coconut milk

  • 1 cup frozen raspberries

  • 1 banana

  • 1/2 cup cauliflower, chopped

  • 1 tbsp maple syrup

  • 1/4 cup shredded coconut

  • 1 tsp vanilla paste

METHOD

  1. Blitz all except raspberries and coconut in a blender until smooth.

  2. Gently stir through coconut and raspberries.

  3. Spoon into 6 ice-block moulds and freeze overnight.
