Raspberry Nicecreams
Homemade icecreams are super simple to make, and so easy to try new flavour combinations. It’s also a lovely way to involves kids in choosing different fruits to use.
I make these dairy-free, but you could easily include some Greek yoghurt if you like. You could also include some cacao nibs or any other bits you fancy - it’s such an easy recipe to substitute whatever ingredients you have on hand!

INGREDIENTS
165ml coconut milk
1 cup frozen raspberries
1 banana
1/2 cup cauliflower, chopped
1 tbsp maple syrup
1/4 cup shredded coconut
1 tsp vanilla paste
METHOD
Blitz all except raspberries and coconut in a blender until smooth.
Gently stir through coconut and raspberries.
Spoon into 6 ice-block moulds and freeze overnight.
