Flourless Anzac Biscuits

Who doesn’t love a good ANZAC biscuit? My favourite kind is crunchy on the outside and a bit chewy on the inside, and this recipe delivers every time.

These are pretty low in refined sugar, and the almond / flaxseed meal adds more protein & B vitamins than if you were using flour.

These do best in an airtight container in the fridge for up to a week, not that they will last that long :)

INGREDIENTS

  • 125g butter

  • 2 tbsp maple syrup

  • 1 1/4 cup mixed almond & flaxseed meal

  • 1 cup rolled oats

  • 1 cup coconut (shredded or desiccated)

  • 1/4 cup raw sugar

  • 1/2 tsp bicarbonate soda

  • 2 tbsp boiling water

METHOD

  1. Combine all dry ingredients (except bicarb soda) in a bowl.

  2. Melt butter & maple syrup together in a pot.

  3. Add boiling water and bicarb soda to the same pot & remove from heat, stirring vigorously.

  4. Mix wet ingredients into bowl with dry ingredients until just combined.

  5. Spoon portions onto a baking tray and bake on 175 (160 fan forced) °C for 15 minutes.
