Banana Chia Muffins

These muffins are really basic to cook, you don’t need expert level baking skills - it’s pretty much a 2 step process involving a mixing bowl and my beloved NutriBullet. πŸ™ŒπŸ»

INGREDIENTS

  • 1 mashed banana

  • 2 eggs

  • 1 tsp vanilla paste

  • 1/4 olive oil

  • 1/4 cup water

  • 1/4 cup maple syrup

  • 1/4 cup chia seeds

  • 2 cups almond or other nut meal

  • 3 tsp baking powder

  • 1 tsp ground cinnamon

  • 1/4 cup dark choc chips (optional)

METHOD

  1. Stir or blitz wet ingredients until combined.

  2. Add wet to dry ingredients and gently fold through until just combined.

  3. Spoon into a 12 cup muffin tray.

  4. Bake for 25min on 180 degrees.
