Banana Chia Muffins
These muffins are really basic to cook, you donβt need expert level baking skills - itβs pretty much a 2 step process involving a mixing bowl and my beloved NutriBullet. ππ»

INGREDIENTS
1 mashed banana
2 eggs
1 tsp vanilla paste
1/4 olive oil
1/4 cup water
1/4 cup maple syrup
1/4 cup chia seeds
2 cups almond or other nut meal
3 tsp baking powder
1 tsp ground cinnamon
1/4 cup dark choc chips (optional)
METHOD
Stir or blitz wet ingredients until combined.
Add wet to dry ingredients and gently fold through until just combined.
Spoon into a 12 cup muffin tray.
Bake for 25min on 180 degrees.
