Baked Oats with seasonal fruit

This baked oats recipe is SO CREAMY and delicious, and the stewed apples taste like custard! Enjoy them warm or cold, you can bake the night before & reheat in the morning - these make the perfect workday breakfast if you’re strapped for time.

INGREDIENTS

  • 2.5 cups rolled oats

  • 1/3 cup hemp seeds

  • 1.5 cups milk of choice

  • 3 eggs

  • 60g butter, melted

  • 2 apples (or pears), peeled, cored, and chopped

  • 1 carrot, grated

  • 1 zucchini, grated

  • 1 tsp vanilla paste

  • 1 tsp baking powder

  • 1-2 tsp ground cinnamon

  • 1/4 cup mixed sunflower and pumpkin seeds

  • 1.5 cups mixed berries, fresh or frozen

METHOD

  1. Heat oven to 170°C and rub a little butter or olive oil on a rectangle baking dish.

  2. Meanwhile, whisk all other ingredients (except berries) together in a bowl

  3. Gently stir through berries before pouring into baking dish.

  4. Bake for 30 minutes until the center is almost set (this is for a delicious, chewy center). If you want the oats to be a little more baked, cook for another 5 minutes.
