Zesty Mango & Coconut smoothie
Looking for a refreshing summer smoothie, that you can enjoy all year round?
I love making the most of mango season any way I can, but I also always have my freezer stashed with frozen mangoes so I can make this smoothie because it is INSANELY good.
SERVES: 2
INGREDIENTS
1 cup diced mango
1 frozen banana
1 cup coconut water (+ more if required to reach you desired consistency)
½ cup cauliflower, chopped
½ tsp turmeric
½ cup plain greek yoghurt
1 tablespoon fresh lime juice + 1 tsp lime zest
Handful ice cubes
1 scoop vanilla protein powder (optional)
METHOD
Place all ingredients in a blender and blend until smooth, adding more coconut water to reach desired consistency
Enjoy immediately.
