Silverbeet and Pancetta Bake
This bake is so versatile - you can prep for breakfast, lunch or dinner - it’s packed full of protein, fibre and is an easy and delicious way to reach your daily vegetable target.
INGREDIENTS
1 bunch silverbeet, finely sliced
1 onion, diced
100 gram pancetta, diced
1 clove garlic, crushed
1 tsp ground nutmeg
5 eggs
1 cup milk of choice
3/4 cup tasty cheese, grated
Salt and pepper to taste
METHOD
Heat oven to 180°C, and rub a little butter or oil over a pie or quiche dish
Heat a small amount of oil in a deep frying pan and fry the onion and pancetta until pancetta is crisp and golden. Remove and set aside.
Add the silverbeet and garlic to the same pan with a little more oil and cook until softened, around 5 minutes, stirring regularly.
Meanwhile, whisk together eggs, milk, and nutmeg until combined.
Combine onion, pancetta, and silverbeet in a baking dish before pouring over the egg mixture.
Top with grated cheese and bake for 25 minutes until golden on top.
Enjoy cold or warm.
