Silverbeet and Pancetta Bake

This bake is so versatile - you can prep for breakfast, lunch or dinner - it’s packed full of protein, fibre and is an easy and delicious way to reach your daily vegetable target.

INGREDIENTS

  • 1 bunch silverbeet, finely sliced

  • 1 onion, diced

  • 100 gram pancetta, diced

  • 1 clove garlic, crushed

  • 1 tsp ground nutmeg

  • 5 eggs

  • 1 cup milk of choice

  • 3/4 cup tasty cheese, grated

  • Salt and pepper to taste

METHOD

  1. Heat oven to 180°C, and rub a little butter or oil over a pie or quiche dish

  2. Heat a small amount of oil in a deep frying pan and fry the onion and pancetta until pancetta is crisp and golden. Remove and set aside.

  3. Add the silverbeet and garlic to the same pan with a little more oil and cook until softened, around 5 minutes, stirring regularly.

  4. Meanwhile, whisk together eggs, milk, and nutmeg until combined.

  5. Combine onion, pancetta, and silverbeet in a baking dish before pouring over the egg mixture.

  6. Top with grated cheese and bake for 25 minutes until golden on top.

  7. Enjoy cold or warm.
