Mango Lime Nicecreams

These tasty treats are dairy-free, vegan and full of fibre!

They are also toddler-friendly (if serving to kids under 2, leave out the maple syrup to avoid added sweeteners).

My kids go bananas for these, and have no idea I’ve snuck in some veg. They taste like summer and something the whole family can enjoy!

INGREDIENTS

  • 1.5 cups frozen mangoes (or flesh of two fresh mangoes)

  • 165ml coconut milk

  • 1 tbsp maple syrup (optional)

  • 1 lime, zest and juice

  • 1/2 cup cauliflower

  • 1/2 tsp turmeric

  • 1 tbsp collagen powder (optional)

METHOD

  1. Combine all ingredients in a NutriBullet or blender.

  2. Pour into ice block moulds (i use the Kmart ones because they’re a good size for kids)

  3. Place in the freezer overnight.
