Jaffa Cakes

These are a perfect lunchbox snack and tasty treat with a coffee, and although there’s no need to feel guilty about ANY treats, these are high in fibre from chia seeds & nut meal, and natural sweetness so you can go back for seconds. 😉

I used a half and half mix of wholemeal flour and nut meal, but you could easily make these gluten-free, & dairy free by using a dairy-free milk option.

INGREDIENTS

  • 2 cups flour/nut meal

  • 2 tsp baking powder

  • 1/4 cup chia seeds (soaked in 1/3cup water)

  • 1/2 tsp salt

  • 2 eggs

  • 1/2 cup milk

  • 1/4 cup maple syrup

  • 1/4 extra virgin olive oil

  • 1 tbsp orange zest

  • Juice of one large orange (approx. 1/2 cup)

  • 1/2 cup dark choc chips

METHOD

  1. Mix dry ingredients together until combined.

  2. Stir in wet ingredients.

  3. Spoon into 12 cup muffin tray & bake at 170 degrees (fan forced) for 20 minutes.
