Flourless ANZAC Biscuits

These biscuits are to die for – crunchy on the outside, and a bit soft on the inside – the perfect ANZAC biscuit in my humble opinion!

 

Serves: Makes 12 cookies

Total time: 30min

 

Ingredients

  • 1 ¼ cup mixed almond & flax meal

  • 1 cup rolled oats

  • 1 cup coconut, shredded or desiccate

  • ¼ cup raw sugar

  • 125g butter

  • ½ tsp bicarbonate soda

  • 2 tbsp boiling water


Method

1.   Combine all dry ingredients (except bicarb soda) in a bowl.

2.   Melt butter in a pot over medium heat with maple syrup.

3.   Add boiling and bicarb soda to the same pot, remove from heat & stir vigorously.

4.   Add wet mixture to dry ingredients and stir until combined.

5.   Spoon portions onto a lined baking tray and flatten with the back of a spoon.

6.   Bake at 175°C for 15min.
