Gluten-Free Choc Passionfruit Brownies

If you are wanting to level up your brownie recipe, look no further! These gluten-free treats are packed full of fibre, melt in the mouth with dark chocolate chunks, and best of all - they take 5min to prep!

INGREDIENTS

  • 1.5 cup ground flaxseed or almond meal (I use a mix of both)

  • 1/2 cup cocoa

  • 1/2 cup coconut oil, melted

  • 1 tsp baking powder

  • 1 tsp vanilla paste

  • 1/2 cup sweetener (I used rice malt syrup, but you could use maple syrup)

  • 3 eggs

  • 1/2 cup walnuts (optional)

  • 100g 85% dark chocolate

  • Flesh of one passionfruit

METHOD

  1. Combine all dry ingredients in a bowl and stir until combined.

  2. In a separate bowl combine wet ingredients and whisk.

  3. Pour wet ingredients into dry and fold through.

  4. Pour into baking tin and bake at 150 degrees C (fan forced) for 20 minutes or until skewer comes out clean.⠀

  5. Allow to cool before storing in the fridge in airtight container.
