Beetroot Soup

Beetroots are such an incredible vegetable, and one that I highly recommend introducing early on to babies as a way of broadening their palate.

Just some of the beautiful health benefits of beetroot;

✅ Beets are high in nitrates (like most vegetables) and these have anti-hypertensive effect, which means they can lower blood pressure

✅ High in fibre to regulate bowel movements & feed our gut bacteria

✅ Supports liver detoxification & can reduce fat accumulation in the liver.

INGREDIENTS

  • 3 tbsp olive oil

  • 1 onion, diced

  • 2 garlic cloves, crushed

  • 1 medium leek, thinly sliced

  • 3 medium beetroots, washed and grated

  • 1 large carrot, grated

  • 1L vegetable stock

  • 2-3 tbsp thyme leaves

  • plain yoghurt

METHOD

  1. Heat oil in pan and cook onion until softened, before adding vegetables (except garlic) and cook for 3 minutes.

  2. Add stock and simmer for approximately 20 minutes or until vegetables are soft.

  3. Add the thyme and garlic 5 minutes before end of cooking and season to taste.

  4. Serve hot or cold with a dollop of greek yoghurt.
